Irish Stew Celebrating St. Patrick’s Day in my house was a given.  I grew up with the traditional corned beef, cabbage and potatoes. Over the years that has changed and my own family’s new favorite dish to celebrate is Irish Stew. It’s so delicious. I have always enjoyed Spinach Artichoke Dip. But I really don’t think the mayonnaise is necessary. I prefer not to use it and most recipes include mayonnaise. Secondly, most recipes also include frozen spinach. Well, I was looking to create a recipe that was lower in calories and utilized fresh spinach. So, that’s exactly what I did! This Garlic Shrimp Pasta recipe is quick, easy and delicious. The thin capellini pasta is so well suited for this dish because it cooks quickly, as well as the herbs and spices permeate the pasta which enhances the overall flavor.
