Pumpkin Soup Served in Gorgeous Staub Pumpkin Cocottes

Pumpkins are a rite of passage for Fall, when we celebrate the seasons by decorating pumpkins and eating everything with pumpkin or pumpkin spice!

But pumpkin products extend far through the winter. In fact, I’m still seeing delicious pumpkin-inspired dishes well into January!

When I made this soup, I was so excited to serve it in these lovely Staub Pumpkin Cocottes.  I woke up at 5am to make the soup and I really had no idea how I was going to style and photograph the dish.  But I remember these gorgeous serving dishes and I knew they would be the perfect accompaniment to this heart-warming soup.  I was very pleased with the outcome and looking back at the photos, I can honestly say they came out wonderfully.

Although fresh pumpkins are seasonally available in the Fall, you can certainly cook and make your own puree, freeze it and continue t0 pumpkinize your dishes year round!

Foodie Fact:

Did you know that pumpkins have a lot of health benefits. Eating pumpkin is good for the heart!  It’s loaded with beta-carotene, iron, fiber and many other nutrients. The seeds are good for you too they have the B vitamins and E.  Pumpkin is actually considered a super food, so don’t be afraid to add it to your regular, year-round meal plans!
